How to create a listing which has 3 options??

How to create a listing which has 3 options??  I am in Seller Hub, but 'create Variations' does not work for me.  Thoughts??  Thanks all.

When I create a listing on my desktop in Chrome, I either see the variations field available, or a note saying this listing in this category isn't eligible, with this "Learn more" link beside it:

 you have to start with a new listing, can not sell similar or add variations to a existing listing.

Unless this is something like a color choice on a repeatable item that you will keep in stock you are better off with separate listings anyway,

Variation listings are not available for all categories.   Do you see others in the category you're trying to use?

I've created a variation listing from sell similar. It's how I learned to use variations.
