I have an It5em that sold. After two days I sent an invoice, it has been three more days. How long should I wait before I relist the item and mark the person as a non payor?

It's all automated now; ebay will send reminder and if buyer does not response, release your item to relist and 'ding' that buyer with a 'non payer'; so you do nothing but wait (4 days total)

If Ebay doesn't cancel the order on day 5, you can cancel it and use non-payment as the reason.

It's automatic for sellers who had already set up the old Unpaid item Assistant. Other sellers might have to initiate the cancellation manually. OP said it had already been 5 days.

eBay allows you to cancel the transaction based on "Buyer didn't pay" if the buyer doesn't pay within 4 full days (i.e., 96 hours). But given the holiday weekend, you might want to give him more time, in order to preserve the transaction. Your buyer might be traveling or otherwise distracted.
If you want to cancel and give him a strike, you can do that any time since it has already been more than the minimum of 4 days. Here's the process:

Don't relist until after the sale is canceled.
If you relist to soon the buyer can still pay and if someone else buys
it then you will be siting there with two buyers for the same item.

Do not send invoices again and again. It will count up to 4days again.

I agree not to send invoices again and again. I disagree that it resets the timer.

This doesn't sound like the timer resets to me either: "If the buyer still hasn't paid after you've sent the invoice, and it's been more than 4 calendar days since the listing ended..."
