I see auctions where, for example, someone has 50 to 75 trading cards from the same series. Instead of having to list each one individually I see auctions where you can list all 50 cards, individually, on one auction and then buyers pick which one (or ones) they want to purchase....how do you set up that type of auction?

I could be wrong but I think you cannot have buyers choose what they want on an auction. If you want to do it that way list it as a BIN and have buyers choose on the listing.

I think you are talking about variations listing, but that's not really what they are designed for.]
And that would only be for fixed price/buy it now listings, not for auctions.

You're seeing a fixed price listing (not auction) with the "Variations" format option.
As noted in another post, that's not what eBay originally intended the format to be used for. eBay expected it to be used for variations on a single item, such as different sizes or colors of a shirt. But sellers do take advantage and just list completely different items that happen to be in the same subcategory. Here's an overview of the Variations format:
