How can I have different shipping and return policies for different offerings?

5 of my items qualify as media mail but some do not - my active items all default to Media Mail when I revise just one?

Just create new policies for each type, and choose the one you want to use on each listing. We use about a dozen shipping policies, for various combinations of shipping services plus Local Pickup that we want to make available for each listing.

 You can create new policies from the listing form, or the Business Policies page (link in the left column on the Active Listings page).

Since you have more than one variable I suggest going one step further and creating listing templates and name them for quick identification like:

"Books - Media Mail Free - No returns"

"Books - Media Mail Calculate - No returns"

"Non books - Ground Advantage Calculated - Free 30 day returns"

making sure that the "media mail free" part matches the name of your shipping template.

Are you using Business Policies or just setting up the requirements for a listing when you set each listing up?

If you are using Business Policies, just set up another one that meets your needs.  If you don't, just go into the listing and revise it.  Change the they shipping section of the listing.  Click on the three vertical dots and you will see your options.  You might consider Economy Shipping.  Actually I use that one even when I ship via Media Mail because it allows me a couple extra days on the arrival ETA to the buyer.
