Hi everyone! We know this year is going to be a holiday season like no other and we wanted to give everyone a chance to connect with each other over less-directly-ebay things and more holiday stories, traditions, recipes etc. Have fun! Meet someone new! We’re all in this together. 

 

As always please keep the conversation on topic (which shouldn’t be too hard, it’s a broad one after all 😉) and be respectful of each other. This thread will remain open from 11.25.2020 to 1.6.2021.

Key Lime Rum Cake

 

I almost feel bad taking credit for this because it's basically just a boxed cake mix fixed up and made fancy but it is so good everyone thinks it must be a from scratch family recipe.  😉

 

This is the basic recipe I use.  I've been tempted to try it with gingerbread too but haven't gotten that brave yet.

 

For a more office friendly version I usually cut the amount of rum in half and make up the other half with water. You can also add the rum for the glaze while it is heating instead of after removing from heat which will help cook off some of the alcohol.  For a truly non-alcoholic version you could substitute imitation rum flavor, but I've never done it and am not sure on the measurements, so you may just have to experiment.

 

Cake

  • 1 cup chopped pecans
  • 1 box Golden butter yellow cake mix
  • 1 3.4oz box vanilla instant pudding mix
  • 4 eggs
  • 1 cup room temperature water
  • ½ cup melted butter
  • ½ cup dark rum of choice (I use Gosling’s Black Seal Rum from Bermuda)

 

Prepare Bundt pan with non-stick cooking spray or butter.  Sprinkle chopped pecans in bottom of pan. Combine dry cake mix and dry pudding mix together in a large bowl.  Add eggs, water, melted butter, and rum and mix with a whisk or electric mixer on medium speed until thoroughly combined.

 

Pour batter over pecans in Bundt pan.  Bake at 325° for 45 minutes- 1 hour or until toothpick inserted in center of cake shows it is baked all the way through.

 

Remove cake from oven. While still in the pan, use a skewer or toothpick to poke small holes in the cake.  Set aside and make glaze.

 

Glaze

  • ¼ cup butter
  • ¼ cup Nellie & Joes Key Lime Juice or fresh squeezed lime juice
  • 1 cup granulated sugar
  • ½ cup dark rum

Heat butter, lime juice and sugar in a saucepan on medium until sugar dissolves and the glaze starts to thicken (stir frequently and don’t let the sugar burn).  Remove from heat and stir in rum.

 

Pour glaze slowly over warm cake to fill the holes. Wait for glaze to absorb and repeat until all glaze has been used. Allow cake and glaze to cool completely while still in Bundt pan.

 

Once cooled, invert Bundt pan over serving plate and carefully remove cake from pan.  Drizzle any remaining glaze in the Bundt pan over the nuts on top of the cake.

lol, a certain person in the household already has a groc list for this........  there used to alot of rum cakes around when I was a kid and just got "a taste".......haven't had one in years.........looking forward to it.....  Thanks again.....

You're welcome @dhbookds ! The idea to try it with gingerbread comes from my favorite rum cocktail, the Dark n Stormy. 😎  It's such an easy recipe, you could have a lot of fun just using different flavors of cake mix and/or pudding mix or adding different flavors to the glaze instead of lime.  If anyone tries anything different, I'd love to hear how it turns out.

Through the years, some of the favorites have included:

  • The Man Who Invented Christmas/Lee Standiford

This year I'm giving:

 

  • The Life and Adventures of Santa Claus/L. Frank Baum
  • Letters from Father Christmas/J.R.R. Tolkien 

I would welcome any and all suggestions for Christmas-themed novellas or short story collections (aside from Christmas Carol and The Gift of the Magi, or other commonly read Christmas treasures).

Thank you so much @valueaddedresource! I wish I had a box cake mix sitting in the cupboard now so I could give this a try this weekend. It is so clever to use a box-mix, and I bet it turns out great!

 

I'm going to try my hand at a chocolate pound cake tonight - trying something a bit different this year since I'm absolute garbage at making pies.

@pburn  - you're welcome! Spice cake would be yummy too.  Maybe with orange instead of lime in the glaze?

A little of that pound cake recipe wouldn't go amiss, either, Tyler. 

 

P.S. The only way to master making pies is just to keep trying. So what if there are some less-than-perfect attempts? Keep trying.

 

During this pandemic, I've really been working on upping my game when it comes to cooking. I've cooked a bunch of things I've never cooked before--lobster, artichokes, flan, aspic, a lot of miso recipes--some don't turn out great, but, again, SO WHAT? We cook for the joy of the journey, not for the eventual outcome.

Yeah--definitely not lime. Rum? Butter? Vanilla? Chocolate? Maple? I may have to experiment with some different choices . . .

tyler@ebay  that chocolate pound cake sounds awesome too. Would love the recipe as well.

 

The first time I found the recipe that I tweaked to come up with the rum cake, I thought it sounded so strange to put instant pudding mix in it, but that is definitely the secret to making a boxed cake mix really moist.

Netflix recommended "Dash & Lily" to me after I finished Emily in Paris. I had no idea it was a Christmas themed show. Terrific scenes of a snowy NYC decorated for the holidays, sweet, funny. Suitable for the whole family. Eight half hour episodes. A wonderful start to the Christmas season.
