Within a few minutes, I had the bids on two different items cancelled. I can’t find where to see why and who it was. If this was the same person, can I block them? The bids had been up for days so it was very frustrating. Any help is very appreciated!

It's a normal. Buyers can cancel bids on their side. If you want a block a bidder, you can do it with seller hub. Thanks

The Scooby Doo Daphne doll and the New President doll had bids retracted.
I would definitely add each of those users to your blocked bidder list.

It's annoying but it's also a blessing.
If he had not cancelled/retracted and had won, what do you think would be the chances that you would be paid?
You would have wasted seven days with the Auction and four days for the completion of a Cancellation.
To avoid this, don't use Auctions.
Use Fixed Price listings and add Immediate Payment Required .
If the customer doesn't pay the listing remains open.

Do you know which items? Go to the auction item that corresponds to the retracted bid. Click on the bidding history. The next page should show you the detail of who retracted and the reason given. Ebay only has a couple of reasons available for buyers to choose from. See below for eBay’s policy on a buyer retracting bids.
If you feel the bids were invalidly retracted, you can contact eBay to report. The second link below discusses this policy.
A seller can block any user for any reason.

Bidders cannot cancel bids. Only sellers can do that. However, bidders can retract bids for a very few specific reasons. Outside of those reasons such retractions are invalid ones and policy violations. Unfortunately, eBay has made it nearly impossible for sellers to report such invalid retractions.
I recommend that when someone places a bid the seller check their bid retraction record and cancel their bid and block them if they have too many retractions on their record. Alas! This is not always possible unless their is sufficient time left before the end of the auction. Personally, I consider more than one retraction too many.

This is not what sellers want to hear but buyers can always change their mind . This is true on this site, other sires and life in general. Even after the many steps a sale take to complete it can still go sideways. Many things can make a buyer change their mind, you cannot allow each event trigger an anxiety attack. Not everything goes your way in life as not everything goes as planned on eBay. You need to figure out not to let things get personal nor get upset when things do not happen as planned. Learn from the lessons and make adjustments as you go so you increase your percentage of successful transactions on eBay. Heck , eBay cannot figure out how to keep the site itself from glitches and screw ups. Right now, whatever their search apps are, in our opinion, has contributed to a huge drop in sales.

While eBay gives only a few reasons why a bidder can retract a bid- in reality there is only one.
The bidder doesn't want the item.
The bidder will not pay for the item.
Why force an unwilling buyer to complete an auction, only to go through the four days of waiting while an Unpaid Item cancellation is completed?
It's not personal.
It's business.
If you have ever put a box of cookies back on the supermarket shelf, or asked the cashier not to ring it up, you did exactly the same thing your customer did.
