Just wanted to pass along this info I found out in case anyone else is having the same problem. My ebay stock has been off for a couple weeks, and I couldn't figure out why. I discovered that when I end a listing, then choose "Sell Similar" to change the info a bit before I relist, the quantity is changed.
When I look at the summary view of the unsold listing, the quantity is correct. But when I click Sell Similar and get into the listing, the quantity is different than the quantity in the summary view.
Therefore, I was listing products in which an ebay glitch changed the quantity, and I didn't notice it.
If you choose Sell Similar, check the quantity in the listing before you list it.

I believe the quantity is changed back to initial quantity.
Same goes for if you have added quantity or sold quantity. It will default back to the initial/original quantity.

When you use the Sell similar the quantity will reset to the original quantity. According to Trinton this is the expected behavior that eBay built into the process. Personally I don't think it's well thought out. I now create listings where I have mutliples as a single item listing and then edit to change the available quantity. I would rather be out of stock when I have some left instead of an out of stock defect.
Be aware that when using variations this same behavior applies to a simple relist, all variatios will reset to the original quantities.
I've also caught the quantities being reset during a normal relist, but that's rare.
