Does deactivating my listing for a buyer when I have multiple watchers effect my rating? Will I upset the other potential buyer by deactivating? I have 4 watching after posting last night. Thank you-

Yes, you mentioned that. And you need to re-read all the other responses. Listing has a few days to run. Let it run.
What would be your plan, exactly, if you do that and she still neither actually buys, or, if she does buy, if she does not pay?

We aren't saying you were going to do that, but ebay might think otherwise. I received a warning due to communication they deemed questionable.
Also, 4 days to file for non-payment is the minimum. You don't have to file the cancellation that early if you wish to wait. If you have this done automatically, you would need to put them on the exclusion list (or whatever it's called).
