I'm wanting to do a new listing from the same sold listing that I had a few months ago, with the same previous photos and description. I can't find a way to just make the sold item into a new listing. Is there a way to do that?

This was a sold item, correct?
If it's here: https://www.ebay.com/sh/ord/?filter=status:ALL_ORDERS you can relist it or do a sell similar. If it's been more than 60 or 90 days (I forget which) you'll need to make a new listing from scratch.

As long as it's within 3 months it will still be on your orders page. Just click on the drop down menu on the left and look for sell similar. It will create a new listing using the same details and photos. Best of luck to you....

The eBay feature you want is the "Sell Similar" feature which can be found on the Sold item's pull-down menu over on the left-hand side of the page. Click that and a new identical listing will be created. When it goes Active it will have the "NEW" notation in front of the Title on eBay for about 24 hours.

If the item sold over 90 days ago, you may not be able to pull it up for a sell similar. However, if it has been less than 90 days, you should be able to go into your orders and retrieve the entire listing. Once it is up just click on sell similar. You will need to change one character in the heading to prevent the system from thinking you are listing a sold item.

make sure you use sell similar
when I relist 2 month old auctions they get buried and are not at the top of the page since they are already old
when you use sell similar it gives the listing a new date and it starts at the top again
