Is there a way to see which of my items are in someone's cart?

I don't believe so.  I know you can on other selling sites, but not on eBay.

Confirming the above answer is correct @pattik330 - there is no way to see which of your items are in someone's cart.

 

Edit to clarify: My response assumes you are asking if you can see items in a specific buyer's cart since that's what people usually ask on this forum.

Well, you can go to each of your items, and on your item page it will show similar to:

Doesn't tell you who, doesn't tell you how long it's been in their cart, etc.  But there IS a way.  @pattik330

Yes, but only if you look at your listings one at a time in "items eligible to send offers" to see a red banner that says " 1 OTHER PERSON HAS THIS IN THEIR CART" 

Otherwise, no, there is no other way to see which items are in a buyers cart. 
Even though buyers may have listings in their cart, doesn't mean they are actually going to buy it. Some use the cart like a watch list.

Thank you.  A buyer has nine of my items in her cart.  When she went to buy them, the cost of postage was $45.  I told her to buy and not pay shipping till I send her an invoice.  She said she can't do that.  Very frustrating for both her and me.  I contacted Ebay and they told me they would send her an email about how to handle the situation.  They did not.  Sure hope I don't lose that sale!

Buyers can't buy and not pay shipping, eBays check out system won't allow that. 
You buyer needs to request a total from you, you adjust  the shipping and send the invoice.

Or you can just refund the amount overcharged after the buyer pays, or set up a special listing with all items your buyer wants then add the appropriate shipping charge.

If the buyer is not using the app they should see a request total option at the top of the cart which would then allow you to send an invoice IF everything is working properly.  For some reason it doesn’t always work. But first make sure that you have combined payment and shipping enable on your preferences page.
