Can you create a listing without listing it immediately?

Instead of "start now" you can schedule it for later.

Or if you have the out of stock option enabled,

you can make the listing with a quantity of "0" and change the quantity later.

At the bottom of the listing page, there is an option to save it as a draft. Or you can have the quantity at zero and list it but nobody can buy.

inhawaii had it right. Instead of selecting to start it immediately, you can schedule it to start it at a later time and date (be careful with the AM/PM selection!).

Costs 10 cents, I believe.

Personally, I save the listing as a Draft and get back to it when I'm ready to go live. Whatever works for you...
