If we sell custom products sometimes they’re longer then shipping time frames so what should w e do?

The longest handling time before you'd be required to ship any purchase to a buyer is 30 days. If you cannot create your custom product for shipping within 30 days from when you receive their payment, perhaps you could find other items to sell on eBay and limit the marketing of your custom items to local buyers instead of listing them on eBay.

If you cannot always ship within your handling time, then you are increasing your risk of (a) buyers filing "Item Not Received" disputes, and (b) having those transactions count against your "On Time Shipping" metrics.
So the answer to "What should we do?" depends upon how often your will ship late, how many disputes your buyers may file, how much money you stand to make, and how high your risk tolerance is.
It sounds like these items are a poor fit for the eBay venue.

Custom and hand made items would be more suited on an artisan site. Not on Ebay. Like Lucky stated you take the risk of having a case(s) filled against you for item not received and your selling time frame here would be a short one. You can google other sites to give you a selection. Good luck.

If you want to sell custom products, pay attention to products that can be shipped in less time.
