When I list an item, it doesn't have any section that says SKU. Other sellers say it exists, but I can't find it. I only see the UPC. Is the SKU only for those with paid accounts?

On the listing page the third line down is labeled "Custom label (SKU)"

The SKU (Stock Keeping Unit) is any designation you give an item in your own inventory system - that's why it's on a line that is not buyer facing. My SKUs for electronics and media is the latest number of the item listed, so my assistant can pull the correct item per the SKU.
