If you use the Out Of Stock option for Fixed Price listings none of your listings end when there is a sale, they go to out of stock at which point you can decide which ones you want to reactivate (by adding stock) and which ones you want to end (no stock left).
I also have a mix of repeatable's and one off's, every day or two I go over the out of stock list and either adjust the listing quantity or end if I don't think I have any more.
Effective or not, I like to just list a quantity of one instead of offering 10 or 20, it also allows me to check actual inventory levels from time to time so I avoid actual out of stocks.
