On Active Listings, at the top it shows a number of listings (for example 207). Does this include listings that have 0 quantity available? Is there any easy way to see total number of Active Listings with a quantity of 1 or more? A way simpler than downloading data and doing a count in Excel.

Yes, the number at the top of the page does include listings with zero quantity, so if you are using out-of-stock, those will remain on the selling page and will interfere with the count you are attempting. However, you can sort the "available quantity" column and subtract the number that show zero.
A hub might show a count of "10" listings: 2 are out of stock, 1 is a variation, 5 are single GTC, and 2 are auction. Unlike the search page, variations are counted as a single listing.

In Seller Hub the Active list can be sorted by several columns with regard to Quantities but you may have to use the Customize link in the upper right and add columns to the table by checking the box beside the one(s) you want.
Once you have the column(s) you want you can sort the column by clicking on the top of the column ... each time you click the top of the column it will change between ascending and descending order.

Yes, the count includes all active listings.
In the Seller Hub, if you have the Available Quantity section, click the header and it'll show which listings have a zero quantity at the top.

I am trying to get a daily count of how many new items we list each day and the dollar value.
Right now, the formula to find how many items were listed yesterday is:
# of Active Listings Yesterday Morning @ + # Sold Yesterday - # of Active Listings this Morning
However, this has been inaccurate. We have too many listings to do a manual count each day.

Yes it does. If you are using the "out of stock" feature, an item with zero quantity will remain live and will renew each month, consuming one insertion each month (even though the listing is not displayed to buyers).
