I tried looking thru the last 60 days, 2019, 2018, and hidden items (of which there are none), but only 1 of the several items I have returned is currently listed. Why are these items disappearing from my purchase history?

Have you checked the Resolution Center? There should be a link at the bottom of most eBay pages.
Once a case has been opened or if you have been refunded, the items involved typically show up there, unless they have been removed by eBay.

So I went to my purchased history page and tried to find a hard drive I had to return a while back. I set the time frame for this year and went through the various tabs. I noticed the option to set a search date was gone. When I went back to the orders tab the search date had gone back to the last 60 days default. It appears when you change tabs if you have set the search date for one of the year options and go to another tab the setting is not holding. However it may be that for all other tabs other than purchase history the history is not going to be saved more than 60 days. After all if you returned a item or cancelled a sell there is no reason to save that information for you indefinitely. Going forward if you need records of such things you may want to print out order details before ebay removes it.
Also have you have a return or cancelled purchase with in the last 60 days? Ebay has just run a few large updates and in the past data like this got lost or was just deleted to reduce space on their servers. Also check through your orders. I just found the item I returned in my orders list so perhaps these items got moved by mistake.

It also looks like the resolution center only holds claim information for the last 60 days. If you paid using Paypal they may still have records.
