When you say eBay "dumps my watch list" what exactly do you mean?
If the page is not loading, or utterly blank after the heading, try a hard refresh (in Firefox, I think you hold down the shift key and click on the refresh icon, or else hit F5 on a PC). If that doesn't help, try a different browser to see if it's any better. If it looks fine in another browser, try deleting your temporary internet files and possibly eBay-related cookies in your original browser.
If the new Watch List page itself is what's giving you trouble, I prefer to use the old "all lists" link instead:

If you mean that the Watch List page completely loads, but that all your items are missing that would be very worrying to me. I have a lot of items on my Watch List and other lists, and I rely on my lists quite a bit. I have not heard of anyone losing their Watch List; it's possible to accidentally delete an entire list, but not the Watch List itself.
I have noticed that my Watch List tends to act up when I have more than 200 items on the list. Moving some items to another list to get back below 200 seems to help in that case.
