There are multiple ways to delete items from a Watch List -- try another method.
You should be able to delete most items from the item page directly.
If an item is out of stock, you can still delete it directly from the Watch List.
If you are using a desktop browser, go to your Watch List or Summary page, select the checkbox to the left of the item on the list, and then use the delete button at the top of the page.
If you are using the eBay app, from Watching, hit the "edit" menu to reveal checkboxes, select the box by the item, then tap the trash icon at the top of the page.

I've tried all of those with no success. When I click the "delete item", the page leaves a large white area and if I refresh it, the item is still there. If I click the box, I get the "sorry, we couldn't complete your request. Try again later" comment. If I open the item page it doesn't even say "Saved to your watch list/ remove" on top of the page.

Try another browser to see if that makes a difference.
If the item listings does not show any indication that the item is on your Watch List, it may be that your Watch List is not reloading properly, and you are seeing a cached version of the page. Try using your Summary page -- see if the item appears there, and if so, see if you can delete it.

I'm on the Summary page, same thing. Nothing will remove them.

Previously it was possible to use the old "All Lists" or "All Buying" page to remove stubborn items -- those pages used some other method of removal that seemed to work when other methods did not; but unfortunately, eBay has removed those pages, so that is no longer an option.
If you are unable to remove those items using the eBay app or other browsers, then the only other thing I can think of to try is to go to another site such as ebay.ca or ebay.com.au and go to your Watch List there and try to remove those items that way.
