Tracking numbesr don't show on the Ebay list of purchased items, and sellers won't give it to me

Tracking numbers are automatically uploaded if the seller uses ebay shipping or Paypal shipping. If the seller uses some other third party software, s/he would have to manually upload tracking, which is not a requirement of sellers. Wait for your item to arrive. If it doesn't arrive by the last ESTIMATED delivery date, you can file an Item Not Received case in the RESOLUTION CENTER.

Thank you very much for your reply.
By the way, am I talking to some eBay staff member? Just curious, I'm new on this eBay community thing.
If tracking numbers are automatically uploaded if the seller uses eBay shipping or Paypal,
then there must be some glitch
or all the sellers I made business with didn't use eBay shipping or Paypal,
which would be rather strange, as I usually ask them if they could use some other shipping method instead, as, from my viewpoint, it's too expensive, it costs more than the item itself sometimes.
So far all of them said they could not use any other shipping method but Ebay's.
Regarding Paypal, I realized very few sellers say they don't want to use Paypal, the say so on their info related to their items.
I would never buy from a seller not using Paypal.
About your suggestion "Wait for your item to arrive. If it doesn't arrive by the last ESTIMATED delivery date, you can file an Item Not Received case in the RESOLUTION CENTER."
That's very fine, but not practical when purchasing many items at once, it's just too stressing and time-wasting to be checking emails all the time etc and not moving from the delivery address.
I would gladly pay an extra fee to avoid that extra work and the inconvenience.
It's also very fine that you refund the money, but it's about receiving the items properly, not about getting the money back.
So in a nutshell,
1 I have 7+ or so items I didn't receive.
2 No tracking numbers from the sellers, they don't show up at all, no matter what.
3 The sellers ignore my messages regarding this subject.
4 The system doesn't allow me to contact some of them all of a sudden.
5 No transaction ID's either, which is what Paypal asks me.
6 My eBay guarantee is over
7 Seur, which is one of the Spanish carrier companies associated with eBay, doesn't contact me when they can't deliver the items.
8 They don't call me or SMS me or leave any note on my letterbox.
9 They don't email me either (except once, to give me some wrong info).
I got their phone number by chance and they told me very disappointing things about their delivering methods.
10 When some item didn't arrive, eBay told me it was delivered to me.
11 They contacted the seller, and eBay said the seller proved the item was delivered to me, and therefore the case is closed.
12 Then some days later, some eBay staff member on the phone said the item was returned to sender.
13 The sender tells me he didn't receive any info from eBay regarding this subject and doubts very much the item will be returned to him.
14 On my Paypal purchasing list, not even one eBay purchase shows up.
15 Paypal says it's because I didn't pay the items following some specific procedure.
What procedure? I always pay following Ebay's steps.
16 I contacted some Ebay staff on the phone, one of them sent some wrong info, some other ignored all my questions, except one, and some other one gave me some incomplete ID transactions list.
17 Regarding the tracking numbers, she gave me some numbers that are not tracking numbers.
18 My eBay purchased history has some errors. It says some items are delivered and they're not.
It also says some items are not delivered, but they are.
19 Some purchased items that I didn't receive, no longer show on my eBay purchased history.
20 Some item never showed. I paid the seller, and he told me he sent the item to someone else by mistake.
I could go on.

This is a member to member support board. There are a few eBay staff around, but not in general.
Sorry to hear you are having these issues. From your msg I take it you are from Spain? International tracking is an issue. You have to make sure the country you are ordering from participates in Delcon.
Sellers can choose to ship without purchasing tracking numbers. When they do this they are taking a risk because they don't have proof the buyer received the item. Some sellers still choose to save money by shipping without purchasing tracking.
Sellers don't have to purchase labels from eBay or Paypal. Some have agreements with other 3rd party companies that supply labels for a number of reasons. However, if they purchase labels with tracking it's up to the seller to make sure those tracking numbers get to eBay.
I suspect many of the items you are ordering are from Asian sellers. You will rarely get valid tracking when buying from Chinese sellers and there are a lot of reports of fake tracking, tracking to businesses in your zipcode instead of your address, etc. The solution: Don't buy from Chinese sellers, for all other overseas sellers review their feedback before purchasing.
