The description for my items appears jumbled until you click “read more” & then it’s written accurately. I don’t want a potential buyer to start reading the description & be confused on what I’m selling & continue on to someone else because it looks like I don’t know how to write. . Is there anyway to fix that? Will it fix itself over time? (I included photos- see the difference in descriptions?) Thank you.

If you do not provide a mobile description, eBay does it for you.
You can fix this, but not from the mobile app. You need to use the Advanced listing form, on a desktop.
From the Advanced listing form, click on the html tab over the description.
Now insert this at the beginning or end...
<meta name="viewport" content="width=device-width, initial-scale=1">
<div vocab="https://schema.org/" typeof="Product" style="display:none"><span property="description">
blank line
</span></div>
See where it says blank line? Replace that with your desired description. It can have no html in it. I believe it can be 800 characters (which would be your entire desciption), but I would use less. Put what you like there and then, once you save the listing, you can look at it on a mobile device.
I would leave out the bullet points and blank lines.
