Some iPhone and iPad Safari users have indicated that they have had issues with drop-down menus in general, and in particular the Watch List page drop-down that lets the user choose other custom lists. If the issue is with a particular drop-down, there may be a workaround, such as using the "all lists" link to see the items on your other lists:

From individual items on each list, you can use the link at the top of the item page where it says "Saved on your LISTNAME list | Remove" -- where LISTNAME is a link to the whole list. Bookmark each list for easier future access.
If you are having issues with multiple drop-downs not working, and this persists after restarting your browser or machine, updating to the latest available version of Safari, and deleting eBay cookies and temporary internet files, then your best bet may be to install another browser such as Chrome or Firefox, at least to use for eBay.
