Items are visible if I go to Ebay's Customer Service page, displayed in their slideshow of the things I purchased. They don't appear in any of my lists however.

What exactly do you expect to see?
I don't know to what page you're referring when you say, "if I go to Ebay's Customer Service page." I'm not aware of any "Customer Service page" that shows purchases.
I see you're registered in Portugal. Are you using ebay.com? Or an eBay site for some other country?

Even if a list wipe occurs every 60 days (which doesn't seem to always be the case), 2 of the items I purchased were and still are in "transit". And although I requested a refund for one tardy item, the other one was said to come in JULY yet it's been wiped too.
"List wipe"? Nothing has been wiped, the default view on the Purchase History page for orders is "the last 60 days". If you want to see orders from earlier than that, change the default view from "the last 60 days" to "current year" or either of the two previous calendar years using the pull down menu at the top of the "orders" section where it says "see orders from".

My wish list was wiped, too. Although I'm not sure if it had anything at this point.
Your Watch list and other custom lists are separate from your Purchase History. Current items should stay on those lists until you delete them from your list, or in the case of ended single quantity listings, 60 to 90 days after purchase when the item listings are no longer available to be viewed. Even in that case, if you know the item number, it may be possible to find and view the item.
Information about Purchased items should be viewable in your Purchase History for up to three years (current year and two previous calendar years), even if the listings themselves have expired, unless eBay has specifically removed the items from the site due to a problem with the seller.
