Unwanted automatic cancellation

A buyer needed more time to pay and I agreed to give it to him but eBay canceled automatically after 4 days even though I changed the settings. Now a perfectly good buyer has an unpaid strike against him and that doesn't seem fair. How can I change it? Can I cancel the cancellation?

No you can't, but you can advise the buyer to appeal the strike and they can use the communication between you to verify the circumstances.
