If I'm clear, you need to cancel a sale. Go to 'Seller Hub/Orders/Awaiting shipment' and find the order. Use the drop-down menu (at the left) to 'Cancel order', citing 'Out of stock/Item is no longer available'. When you cancel, the buyer will receive a full refund. Good luck.
Take extreme care to never let that happen again. It's the most serious rule violation there is on eBay. You can be banned from selling for life over that and there are no warnings given.
You can pull up the item in the sold section of your my eBay page. There are some boxes, one is cancel the sale.
