I canceled an order when the buyer did not pay after days of me waiting and sending reminders through messages. Now the buyer still wants to purchase the item, but I don’t see how to send an invoice for a canceled item. What do I do?

There is no way to do that, once canceled the sale is complete. You will have to list the item again for the buyer to purchase.  I recommend you do it using the business tool and require immediate payment. That way the buyer has to pay to purchase. If it was an auction just set the buy it now price to the bid price.
