Is it normal to have Ebay manage my payments?  My friends a button to highlight that indicates the buyer must pay for the purchase first.   Is that the same?

Yes, Ebay manages the payments.

Yes, buyer pays before you ship.

Being a new seller, they can hold the funds for 30 days.

Have you signed up for Managed Payments, providing a checking account and your SSN so you be paid?

Just a quick heads up. Do you have 3 sets of 3 of that item, or 1 set of 3 (this lot)?

You are showing 3 sets of 3 available. If you only have 1 "lot of 3" you only have 1 in inventory,,,not 3

If someone buys this "lot of 3" the listing will stay active, and show that you still have 2 more "lots of 3" available.

If that is your intention, fine...just making sure.....
