Hey @craftydeals* - adding to what Elizabeth posted above:
No variation functions work within the app. That means even if you create a variation listing on the web version, you will not be able to update variation quantities, prices or photos when using the app.
Generally speaking: the app is limited to more basic functions and variations are typically more of an advanced business tool.
While I do find some useful functions in the app like being able to quickly respond to messages while out, reviewing sales, etc., I find that 99% of my eBay business is conducted through the website and Seller Hub.
