It appears I’m not alone in finding that I can no longer use eBay after the latest update on my iPad …..not impressed

You don't need the app to use Ebay, just use the web browser and go to the site.

Yes you can access through the browser BUT you need to log in to check al if your feedback, purchases watched items etc. As soon as you do that a box telling you to update appears .

so your idea doesn’t work

For older systems running iOS 15, you can access eBay from a web browser on your device. Delete the eBay app so links open in your browser instead of trying to force open the app.

Happens to a LOT of folks with older devices.  The Android tablet I am typing on now does not work with the App. 

There are a lot of different apps that won't work with older devices. EBay just happens to be one of them.

Delete the Ebay app from your system.
