If you are using a desktop browser, you should be able to delete an item from your Watch list by ticking a box next to the item and selecting the delete button at the top of the page.
If you are using the eBay app you should be able to open the item from your watch list and scroll down and tap the "unwatch" button.
For really difficult cases, try using this link from a desktop browser:

Find the item from among all your list items, and delete it from that page. That method has worked when others have failed.
If that does not work, post an item number and I will see if I can add it (or a similar type item) to my watch list and then remove it.
