This backpack was given to me by someone who worked at Coach and they claim it's legit, despite the 000 code, which Google claims may be a sample. Nothing to me says it's fake as the stitching is very good and the high quality leather smell is present. Can anyone confirm it's authenticity? Thank you 😊

That bag cannot be authenticated and as such, can't be listed since authenticity can't be confirmed.
Over the years, we've see definite fakes, questionable bags and possibly authentic bags with those types of serial numbers.
Many of the bags were claimed (by sellers) to have been "sample" bags often purchased at Coach warehouse sales. They've also been claimed to be employee purchases. But in no instance, has any seller been able to show evidence of a legitimate purchase EVER!
In some cases, bags have had serial numbers with prefixes with date and production codes indicating they were made years prior to Coach's introduction of the bags. In other cases, bags have had serial numbers styles that didn't match the bags they were on. (Although that also happens with fakes, it's purported "sample" bags I'm referring to here.)
This is the first time I can recall seeing a serial number with all zeroes. In past instances, it would just be the suffix (2nd half of the serial number) that had 00000 or 99999 "style" numbers.
Again, for this bag, there's no way to authenticate it nor to prove authenticity.
If you like the bag and plan to use it, that's great. If you bought it to flip, I recommend returning it since we can't say for sure that it's genuine.

Is the serial number the only method of authentication? The quality and material is so high quality that I can't see it being made by anyone but coach.

No, there are many considerations that go in to verifying authenticity, among them the creed and serial number.
Again, I'm not saying it's fake but I can't say it's authentic.
