I want to return an item however the only option it gives me is to get a USPS QR code and scan it at a post office, and pay $5 for that.
Id rather use my company FedEx account and daily pickup, which is free to me. How do I "turn down" the $5 USPS return shipping offer and handle it with my own carrier?

Just use your own shipping label and upload the tracking number to the case.
If you can't upload the tracking number, might have to get CS to do it.

I do not know where you got the idea that YOU have to get a QR code from a P.O. and pay for it.
You should have been sent a QR code which the seller paid for via USPS Label Broker system. It does not cost you anything to get the label printed out at the P.O.. There are also USPS Kiosks that will print the label for you.
Once printed, the tracking# is uploaded to the return info, and your refund processed when a delivered scan is made.

Would only be displayed if the reason for your return, is considered to be a Buyer's Remorse return. eBay considers, Bought by mistake, Changed my mind, Found a better price, I didn't like it and Doesn't fit if a size was given, Color doesn't match photos and a few other reasons to be Buyer's Remorse returns, and then the buyer does have to pay the return shipping cost.
It might help if we knew what reason you gave for the return.
If you are stuck with having to pay for the return, you can use your FedEx account then open the return dispute and enter the tracking number there. I would suggest messaging the seller, let them know you are not shipping the item back using ebay's QR code, and posting the tracking number to the message, as well.

I don't remember the reason I selected, but it would have been related to not needing the part for my project any more. I've been an ebay member for 26 years but I find myself using it less and less because of stuff like this. I can go buy on amzn and return it for free for any reason. I usually over-buy for my projects and return what I didn't use. It's easier than trying to get the exact right part and then ordering again and waiting when I need more of it or a different one.
