I recently started getting this "This store has no inventory available in your location" message that I know for certain is incorrect, I have bought from this seller many times before. Any ideas why I would be getting this message?
I should also mention that I have received an offer from this seller because I have an item on my "watch" list so this confirms the message is in error?

That is an odd one.
I see no items for sale in the seller's store or using the "items for sale" link, but in the full store page I can see four promoted items that are clearly for sale. Checking the seller's feedback I can find links to other multiple quantity listings that are still in stock and still for sale, but that can not otherwise be found in search.
I can put the seller's item in my cart, and there is no notation that the seller is on vacation or that the items are not available for any reason. If I go to checkout, eBay does not stop me, though I have not actually tried to complete a purchase.
I wonder if the seller recently put the store on "time away" and possibly the listings have not be re-indexed since then. Or possibly the seller has run afoul of a policy and the items are being hidden by eBay as a penalty. But that is just a possibility, not based on any real knowledge of anything this seller might have done.

When I have seen that message previously, usually it was because the seller was located in another country (often China) and the seller did not have shipping specified for my chosen location.
Where is your seller located? What location are you using to calculate your shipping?

Thank you so much for checking into this for me, this whole time I thought it was an issue with me! It does seem strange though because this seller does ALOT of sales. I wonder what is going on. Thanks again.

You are most welcome. Yes, the problem seems to be on the seller's end or eBay's end, as I see the same thing you see. Other sellers that I checked at random seem to have items visible, so not every store seems to be empty.

At the moment I can see some inventory this seller has.
The number of items appears to change from sixty to 2161 for no apparent reason as I reload the page.
