How can I change item location on all listings? I can't figure out where the information comes from. I've changed all my shipping addresses.

Each individual -listing- has a "location" zip/postal code in case your items are stored in various locations. This is what displays on the listing as the actual item location.
It's on the bottom of each listing form
You can change it in bulk edit
1) Go to your active listings in Seller Hub: https://www.ebay.com/sh/lst/active
2) Check the box beside each listing you want to make a change to. (start with just 2 listings - later just pick them all)
3) Click "Edit Selected" from the drop-down list
Once Bulk Edit opens,
1) Select your items again, then
2) Bulk Edit
3) Preferences <<==
4) Item Location <<==
5) Apply
6) Submit All
7) Confirm and Submit
8 ) Done
