I have furniture listed for sale and cannot figure out how to be sure the shipping/freight cost are calculated and how I set that up.

If you are shipping an item by freight, you need to select freight. Then you will be able to send the buyer an invoice after you get the freight cost.
eBay will not calculate freight for you - you need to contact local freight companies and figure some base costs, like what they will charge to crate or pallet the items, then when you now your buyer's location, you get a actual quote for them. You can ask the freight company to quote a few locations so you can give a buyer an idea of the cost. Also try a long distance mover - they sometimes have better rates on less than truckload shipping. Usually it is not going to be worthwhile.
The better option is to list for local pickup only. Remember - if the item is damaged in shipping, you pay the freight back to you, and have to deal with the claim. The window for a freight claim is very short - like 7 days - so it is a hassle.
