The email is coming to me in Chinese. How can I change the language of emails sent from eBay to English? Thanks

Your account is registered with eBay Hong Kong, not here on U.S. ebay.com

I believe Chinese is the language for HK eBay site, so you may not be able to change it, unless they offer dual language settings. 

Ask over there - https://www.ebay.com.hk/

In the meantime, you can use a translator - like translate.google.com

Also look at browser translation extensions/add-ons.
