I can’t save any items to my ebay

What error message are you seeing when you try?  I know there is a maximum number of items that can reside on your Watchlist, but I don't recall the number.

How many active items are on your Watch List?

And how many ended items?

You should be able to watch up to 500 items, total.

The eBay app may not be deleting items properly. Try using a browser to delete some old or ended items from your Watch List, verify that they have been deleted, and see if that allows you to add new items to the list.
