You should be able to unwatch an item from the item page assuming the item is still in stock. If the listing is a multiple variation listing, you must first choose the correct variation to unwatch.
You can also unwatch an item directly from your Watch list. If you are using the eBay app, choose "edit", then check the box in front of the item you want to delete, then tap the trash icon in the upper right.
