I am stuck in a rut when it comes to some of the items I plan to sell. These are HO Scale model buildings pre-built, I plan to use those transport boxes from Home Depot around 17x11x11 and up to ship.
Typically, how does eBay calculate shipping if I were to use USPS Priority Mail? Because if I were to use those flat rate boxes then yes, it would be no problem. But I will use a more giant box because it will not fit the buildings.

To use calculated shipping, you need to enter the box dimensions and what it'll weigh when packed, into the shipping section.

Weigh the item in the box with all of the packing material you will use. Select calculated shipping, and enter the weight and dimensions, and select ‘priority mail’ (not a flat rate or regional box or envelope). The system will calculate the cost based on weight and distance.

I noticed on the option it says "I don't know the package details" what does that option mean and is that a better choice if I don't plan to use a USPS standard flat rate box?

I noticed on the option it says "I don't know the package details", if I don't know the package details or that I decide to use a random box to accommodate to make sure the item fits, is that a good option?

Without the package details, Ebay will not be able to calculate the shipping charge.
If you're not using a Flat Rate box, to get the shipping correct, you need to enter the package details.
If they charge the buyer $10 for shipping and it's going to cost you $35 to ship, you'll have to make up the difference.

No, that is never a good option. As @kensgiftshop described, if eBay estimates low, as they usually do, you are on the hook for the difference.
If you don't have a box, don't list it yet - get a box and the packaging first, weigh and measure, then list it.
