I have been receiving less and less tracking numbers for my recent orders.
Out of my last nine orders, I have received only one tracking number?
What is going on? Has eBay changed their policy?
Is it up to sellers to use tracking numbers or is it an eBay policy to use tracking numbers for all orders?
Using tracking numbers protects both the seller and buyer.
Will 'not showing tracking numbers' be a common thing going forward?
Are tracking numbers required for sold items above a certain price?
'Purchase History' nor 'View Order Details' shows order tracking numbers.

There have been no policy changes. Sellers are not required to ship with tracking or have tracking validated at drop off. Most sellers will do both as it hurts their seller metrics if they don't.
I don't know why you have received only one tracking # out of nine, but it is likely that either the seller is new and doesn't know how to post them or obtain them or they haven't shipped yet.
Tracking protects the seller. Buyers have eBay's Money Back Guarantee.
When it's past the estimated delivery date shown in your Purchase History, you have up to 30 days to use the option next to the transaction to open a case for an item not received. The seller will have 3 business days to prove delivery or refund. If he doesn't, go back to the case on day 4 and use the option to ask eBay to step in. They will force the refund.

Prior to Sunday night, my last nine purchases on eBay were with nine different sellers.
Each order states 'Order Shipped'.

That means the seller marked the order as shipped.
If you don't receive your items by their estimated delivery dates shown in your Purchase History, follow the instructions I gave in my first response. There is no other action you can take before then.

If the seller uses ebay shipping, the tracking number is automatically uploaded to the transaction. If the seller is using a third party shipper, it is then up to the seller to copy/paste the tracking number into the transaction, and they apparently are not doing this.
