Is there a way to sort in the "Purchases" section the item(s) that have been paid but have not yet delivered?

You can sort your Purchases by "Ready for feedback", which, if you leave feedback consistently, should only show you purchases that have not arrived or have not been rated yet.

I am not entirely sure if that would include unpaid purchases, though, as I rarely wait very long to complete the payment.
