Shipping Label Choices

When selling an item over $750 and I want adult signature required through USPS what service do I want. I do not know what ship cover is so I always use USPS. Do I choose Economy Adult Signature Required?

I would select Priority because I would want the item to arrive to the buyer as quickly as possible.  For additional insurance, I select USPS, but many have had good results using Ship Cover for insurance, because it is cheaper.
