Is there any way to search the fields that are in the “about this item” section of a listing?
There is detailed item information for products that a seller lists every day and sell out in less than a minute. The only way I can see this info is to open each item and open “about this item”, at that point they are usually sold.
I’d like to be able to setup a search that will search a specific seller and also search “about this item” for a specific keyword to bring back the items that I’m interested in quickly. It seems someone has done this with the api or something similar to be able to buy these specific items so quickly (as it isn’t every item the seller lists and there isn’t anything differentiating in the title or description).
Is there any way to format a url to search these fields?

By default, a keyword search should return listings that match words in the title or item-specifics of each listing.
There is also an option you can select to search the body of the description as well.
Try testing your search on sold or completed items to see what results are returned and to check if your search is working the way you intend to find items you are interested in and exclude others you are not.
If an item is actually selling out within a minute of becoming live, you would have to perform the search within a minute of the item being indexed in order to make a purchase, though. Since you do not know when indexing takes place, you would likely need to perform the search many times and be prepared to act very quickly.
You may want to look into third-party automated searches that can be run many times per day and which can generate an email message as soon as an item matching your criteria is found. Google ebay automated searches for some options. Last time I checked, some search services would allow you to perform up to 500 free searches per day; for more than that you may need to pay for an account.

The search doesn’t work on sold listings (tried to confirm) as it appears the search only looks in Title and Description. The terms I'm looking for only exist in the “about this item” fields.
The one good thing is that the seller often has the listings set to start on the hour, so it’s easy to check. It’s really being able to get the 1 or 2 that I’d be interested returned back instead of looking at:
sellers items
sort by newly listed
open each and look at About this Item
It looks like most of those fields are filter options on categories/sub categories but not all are available in advanced search options when drilling down through the categories.
just trying to figure out how certain people get there quicker than me all the time :).

Searching within the item description does not work with sold or completed items, unfortunately. You can only search title and item-specifics for sold or completed items. In active listings you can select the "Title & Description" option, though.

I am not familiar with the "About this item" section, other than the fact that that heading appears in the description of item listings in the eBay app. I checked several listings using a desktop browser, and did not see that section in any of those listings. If the terms in that section are item-specifics, they should be findable with a default keyword search. If that section is just something the seller has added to the body of the description it should be searchable using the "Title & Description" option of active listings search.

This is an example of a listing with “about this item).

I think it’s added when there are a lot of standard properties available for certain categories...maybe?
Using that example and searching for the following:
seller:pxg_express riptide
I would hope for it to return the listing shown above (and a few others that they have listed) but the search doesn’t appear to look in the fields in “about this item”.

When viewed using a desktop browser, the terms shown in the "About this item" section in your image of the mobile version of the page appear to be item-specifics:
Any of the specific terms that relate to the item itself should be searchable, in theory. But that does not always work in practice. I tried searching for "Project X EvenFlow RipTide" and got mixed results.
A search for evenflow riptide pxg senior flex value turns up no results, but that seller's listing does appear under "matching fewer words".
If you confine your search to the particular category that listing is listed in, you may be able to choose the filter options that correspond to many item-specifics directly, though. For some reason "Shaft" was not an item specific I could choose, though, in the individual golf club category.
Here is a search of that seller's other items that turns up just that one listing based on some of the other item-specific filter options:

Thanks, maybe I’ll play around on the desktop a bit. So used to using a mobile browser or app these days.
I was really hopeful that there might be a syntax to construct a url in a similar manner you can use
SID in a url like this. I realize it’s wishful thinking 😂.

I find using a desktop browser much easier when dealing with searches and filters.
