How can I stop eBay from automatically relisting my items when they do not sell?

You are using the Quick Listing Tool.  Auction style listings get 8 free relists if they do not sell.  You can switch to the advanced/business tool to have more control over your listings.  That option is in the upper right corner of the QLT.
