The customer has won the bid, and I await payment. Must a customer pay for their item before I (the seller) can get a QR CODE for shipping?

Yes, the buyer has to pay for the item plus shipping plus sales tax. Once that happens, and the transaction is in Awaiting shipment, when you go to print the shipping label, you can either print to your printer or get a QR-code sent to your mobile device. If you select the QR-code, you show that to your post office clerk, and s/he can then print the shipping label for you.

The buyer sets the delivery address when s/he pays (s/he can set a default one before but it can be changed for any particular transaction up until s/he actually pays; the seller is required to ship to the address given at payment--beware of buyers wanting to change it afterwards) and until then the amount of postage cannot be determined (especially if you offer more than one s/h option).
