How do I eliminate how many products I sold? This amount is next to how many is available?

The only way to do that is to list with a quantity of one. When that sells, start a new listing for one, etc. This will of course reduce your sales if you are selling an item that buyers might want more than one of.

Why do you want to eliminate that information?
