Hi,
I could not find and option to set the minimum bid price I am willing to accept when I created my listing for item # 197103245387. Is there still a way to do that? Thanks!

I see your listing here and it currently has 23 bids from 2 bidders. In the last 24 hours, it has received 80 views, which indicates high demand or high interest, many buyers tend to wait until the last moments to place their bids.
Similar items have sold well recently, with one closing at $587.51 with 33 bids from 12 bidders on Feb 13, 2025. Based on this, you have a strong chance of your item selling for a similar price or higher.
Regarding minimum bid prices—once an auction has started, you cannot retroactively set a minimum price. The correct way to do this in the future is by using the Reserve Price option when creating the listing.
Additionally, canceling an auction with active bids is only allowed under specific circumstances, such as:

The "Starting Price" (sometimes called "starting bid", I think eBay changed it from the latter to the former to make it clearer that it sets the minimum price) sets the minimum price for an auction item (unless you pay a relatively high fee for a Reserve Price, which in my opinion is not worth it, even without the fee).

You will be charged the final value fee if you cancel bids. Just let the auction run its course. Most bids come in at the last minute.
