Someone purchased a large $ item from me. We were not 100% how to make it all work once he purchased it. The deadline came and we were not paid and that was ok with us as we were talking with buyer on how we could handle me getting payment . We are in the US and he was in Canada which was also a bit of a problem. This item has now been canceled, however in our eyes it is still a sale in progress. Is there a way I can extend the payment option until we resolve this, and the buyer does not get a bad hit for not paying on time?

How was it "cancelled" - did you Cancel it or have your Preferences set to cancel it automatically after 4 days?
If it's been Cancelled, it's no longer a sale in progress.
You would have to list it again at some point for the buyer to purchase it again.
You can extend the time frame to pay, but they must pay within 30 days or eBay will have to cancel it and you won't get your fees credited back. Check how your Preferences are set up for this.
