I want to set immediate payment on my listings but I am not seeing an option to do so. How can I do this for current and future listings.

Down towards the bottom of the new listing form, under preferences, click where it says payments manged by eBay. You will get a menu where you can turn on IPR.

Thank you. Mine is greyed out. I'm guessing this needs to be done in the beginning or am I missing something?

Also, does it work for best offers. I know when I am buying it is requesting my payment info to make an offer. However, the last couple of offers I accepted are still pending payment from buyer.

Is there an open offer? You can't make changes while an offer is in play. Otherwise, you should be able to revise a fixed price item at any time.

For best offers, go to the bottom of this page and check the box 'require a payment method'.
https://www.ebay.com/bmgt/buyerrequirements
Also while on that page, block buyers with 2 or more unpaid cancellations.

Again, huge thank you! I currently have 2 offers I accepted. One is on the 4th day with no payment and the second is on day 2. Very annoying because both had several watchers and one had multiple offers.

Immediate Payment Required applies only to Buy It Now.
There is an ongoing experiment where some but not all buyers are required to pre-authorize payment to make an offer (and further it does not apply to accepting offers and counteroffers from you). You can opt in or out of the experiment in your Buyer Requirements (but note you have to click the little info icon on that line to find out it doesn't apply to all buyers).

Scammers like best offer because they don't have to pay to tie up your item - they can try to send you a fake payment notice, or ask you to include a gift card and they will 'send' you more money.
The 'buyer' gets 4 full days to pay, so on day 5 cancel as unpaid.

Lesson learned. Thank you.

Do I have to wait the 4 days or can I cancel somehow?

Hi @bjc88 Unfortunately the previous method of turning Immediate Payment required on just below the pricing area on the Business listing form with a simple check box was too obvious of a location and certainly too simple.
eBay decided to make it sort of like a Freddie the Fish game where Sellers have to go different places to
find what they are looking for ...
So its as "simple" as scrolling down the page towards the bottom - pointing clicking, pointing & clicking , pointing and clicking, pointing and clicking (follow the green arrows in the pics below)
Then you click the "Done" button in the uppper right TWICE to cycle through. Lots of pointing and clicking ... hope that helps.
