Since you have listed Auctions, you'll want to enable the Buyer Payment Requirements here: https://www.ebay.com/bmgt/buyerrequirements

 

Auction: "Require buyers to provide a payment method before they place a bid."
and
Best Offer: "Require buyers to provide a payment method before they make an offer".

For Buy It Now's (fixed-price or as an option in an auction listing) on the listing tool (not the quick listing tool which doesn't have that option--if you are using the latter there should be a link to switch to the business tool or whatever they are calling it these days at top right)  it is below the BIN price IF that option has been enabled in the "See pricing options" dropdown:

For auction bids and Best Offers there it is sooner than "immediate",  you can require (and all sellers were opted into this) pre-authorization of automatic payment on your Buyer Requirements page ("require buyers to provide a payment method for . . .") when they place the bid/offer.    The one for auctions might not be quite universal to all buyers yet, last I heard it was still in testing but seems to be very widespread at least.  Be aware that those make combining shipping a problem.
