Ebay has changed since I have started selling things years ago. The policies are a little different now and I'm not sure about cancelling an unpaid item.
I can click cancel order, but it doesn't give me the option to select the real reason: it's been 4 days, I've sent multiple invoices and the buyer hasn't responded. What reason should I select when the real reason for cancelling an order is the buyer's fault?!

On the fifth day you will be able to cancel and select non-payment as the reason. This way no penalty to you and buyer gets a strike.
